The Champagne Brut Nature Cuvée Les Goulats by Perseval-Farge comes from the ancient native varieties of 55% Arbanne, Fromenteau and Petit Meslier - plus 45% Chardonnay - from the "Les Goulats" parcel located in the Premier Cru village of Chamery, in the Montagne de Reims. The assemblage of this particular Cuvée is composed of the vintages from 2009 to 2013, 25% of which are vinified in wood and only partially carry out malolactic fermentation. No dosage has been added - making it a Brut Nature.
The Cuvée Les Goulats is a real collector's item for Champagne lovers, who love to vary and think outside the box: the ancient varieties of grapes of the assemblage give the nose and mouth an extraordinary aromatic complexity and opulence. Yellow fruit, candied orange peel, apple, mandarin and oxidized and mineral finish; freshness and great acidity on the finish. A Champagne certainly not for every day and to be tasted on its own to better understand the variety of scents.
Winemaker:
Perseval-Farge was built in 1808 in Chamery, a Premier Cru village in the heart of the Montagne de Reims. Today, the 4 hectare Domaine is run by the fifth generation - Isabelle and Benoist Perseval - who continue to preserve the important identity and family heritage. Since 1990, 6 different lieux-dits have been used in the vineyard for integrated viticulture, certified "Haute Valeur Environnemental" for its commitment to the use of products and production processes that respect the environment.
The vinification and aging of all or part of the wines takes place in wooden barrels with assemblages of at least 40% of "vin de réserve" and aging time on its yeasts of not less than 5 years for the "sans année" and beyond for all vintage.
